Easy Asparagus Recipes
Asparagus is one of the first vegetables to be ready to harvest after a long cold winter. Many people, myself included, are craving fresh vegetables. Now that spring is on the way, I can't wait for the asparagus to start growing.

There isn't an easier way to prepare Asparagus. Garlic and asparagus make a wonderful flavour combination and I prepare this recipe a couple times a week during asparagus season.
Green garlic looks like green onions and is available in early spring like asparagus, but can be quite hard to come by so I grow my own. Garlic scapes are the flower pods and stalks from the garlic and are also available in later asparagus season. Garlic cloves make a good substitute if you can't find any green garlic or garlic scapes.
Use more garlic if you really like garlic, or less if it's not your favourite flavour.

Total Time: 20-30 mins
Serves: 4-6
Ingredients
- 2 lbs Asparagus
- 5 or 6 stalks Green Garlic or garlic scapes (Or garlic cloves)
- 2 tbsp oil
- salt
Instructions
- Cut tough ends from asparagus, leaving stalks whole
- Toss garlic and asparagus in a bowl with oil and salt to coat.
- Lay asparagus and garlic on baking tray
- Roast at 350 F for 20 minutes or until asparagus is soft.

Serves: 2-4
Asparagus in Cream
- 2 lbs asparagus
- 2 tbsp butter
- white pepper
- 1/8 tsp nutmeg
- 4 tbsp heated heavy cream
- asparagus cooking water
- salt
Instructions
- Cook asparagus in boiling salted water for 5 minutes until half tender
- Drain carefully reserving cooking water
- Put asparagus in a casserole that can go on the stovetop
- Add butter and 2 tbsp of reserved water
- Simmer covered over very low heat for 10 minutes or until asparagus is tender.
- Shake casserole frequently to prevent sticking and add reserved water 1 tbsp at a time if necessay
- Stir salt, pepper and nutmeg int heated cream.
- Pour over asparagus and cook for 2-3 more minutes
- Serve very hot
